Single Origin

Single Origin is a simplified phrase with a big definition. It means that our Extra Virgin Olive Oil is all sourced from the same place or origin and not blended from different origins around the world.

The most important thing about single origin is its traceability, the fact that you know exactly where your olive oil originates from and that it’s a very specific varietal olive oil from a single origin, and not a blend or mix from several origins with various profiles is of the utmost importance to the consumer. Usually of a higher quality, Single Origin, is the acknowledgment that the olives are from a particular grove located in a unique setting, whilst its flavor depicts its origin, possessing characteristics of that specific area where the olives are grown.

Ellora Farms Single Origin extra virgin olive oil goes beyond the concept and is certified by European Union as Single Estate PDO “Protected Designation of Origin” and comes from just two certified Estates from the Island of Crete in Greece – Kolymvari Estates and Messara Estates.

All the production processes from receiving the olives in the mill after harvesting to packaging, undergo state of the art process using the latest technology carefully designed to extract the best yield from the fruit. The location of the oil mill, at the foot of the field, assures that the olives arrive alive at the milling area. To avoid deterioration, the olives are processed within six hours of being picked. During extraction, the temperature is kept below 25ºC to prevent the loss of the most volatile components and aromas.
